1 Green’s Carrot Cake Mix
½ cup sultanas
½ cup chopped apricots
1 tsp orange rind
¼ cup desiccated coconut
60g butter
½ cup honey
3 tbs milk
1. Preheat oven to 180°C.
2. Combine in a bowl cake mix, apricots, coconut, orange rind and sultanas.
3. Melt butter and honey over low heat and add milk.
4. Stir into dry ingredients and mix well. Roll 1 heaped tablespoon of mixture into a ball and place onto prepared tray, repeat with remaining mixture. Allow room for spreading.
5. Bake for 12 to 15 minutes or until golden brown.
6. Allow to stand on trays for 5 minutes. Cool on wire racks.
