1 packet Green’s Multi-Purpose Muffin Mix
1 cup water
1 egg
1 tsp basil
1 tsp oregano
1 diced tomato
½ cup grated mozzarella cheese
½ cup grated Parmesan cheese
1 grated onion
1 tsp garlic
1 tsp salt
4 tbs sliced black olives
2 tbs chopped anchovies
1. Grease and flour one 12-hole muffin tin or two six-hole muffin tins.
2. Preheat oven at 180°C.
3. Mix water and egg together.
4. Place muffin mix and remaining ingredients into a bowl. Add water/egg mix. Mix until just combined.
5. Divide evenly between muffin tins.
6. Bake for 25 to 30 minutes or until lightly browned on top and skewer comes away clean.
