Salmon Fingers

Green’s Pancake and Pikelet Mix (use one sachet)
¾ cup water
1 egg lightly beaten
210g can red salmon (drained)
310g can corn kernels (drained)
1 cup tasty cheese (grated)

1. Place 1 sachet of pancake and pikelet mix into a bowl.
2. Make a well in the centre.
3. Mix egg and water together.
4. Gradually stir the egg mix into the pancake and pikelet mix.
5. Using a large metal spoon fold in the salmon, cheese and corn.
6. Over medium heat, heat enough oil to 1/3 fill a deep heavy-based fry pan.
7. Drop tablespoons of mix into hot oil and cook 3 to 4 minutes.
8. Drain on absorbent paper.
9. Serve hot or cold with salad and mayonnaise.
