1 packet Green’s Multi-Purpose Muffin Mix
1 cup water
1 egg
1 270g can corn kernels
3 tbs chopped jalapeno chillies (optional)
1 185g can diced capsicum
1 cup grated cheese (aged cheddar, vintage tasty or any other strong hard cheese)
1 tsp salt
1. Grease and flour one twelve-hole muffin tin or two six-hole muffin tins.
2. Preheat oven to 180°C.
3. Mix water and egg together.
4. Place muffin mix and remaining ingredients into a bowl. Add water/egg mix. Mix until just combined.
5. Divide evenly between muffin tins.
6. Bake for 25 to 30 minutes or until lightly browned on top and skewer comes away clean.
